📝 INGREDIENTS
* 2 cups flour can use whole wheat or a gluten free flour blend
* 3 teaspoons baking powder
* 2 tablespoons granulated sugar
* 1/2 teaspoon salt
* 2 eggs
* 4 tablespoons butter melted
* 1 1/2 cups [Almond Breeze Almondmilk Original Unsweetened
* 1 tablespoon apple cider vinegar
* 1 teaspoon vanilla
* 1-1 1/2 cups fresh or frozen blueberries
* whipped cream + maple syrup for serving

ROASTED STRAWBERRIES + RHUBARB
* 2 stalks rhubarb
* 1 cup fresh strawberries halved
* 2 tablespoons honey
* 1 teaspoons vanilla bean seeds removed ( or 2 vanilla)
* 2 tablespoons butter

* 1 tbsp olive oil
* 1/2 Sweet onion chopped
* 1 Red bell pepper chopped
* 1 Poblano pepper chopped or sliced
* 1/2 C yellow corn
* 1 Clove garlic, minced or grated
* Kosher salt + pepper
* 8 Eggs
* 1 1/2 C shredded sharp cheddar cheese
* 1/4 C fresh basil + cilantro chopped

🍴 VEGAN MINCE STUFFED EGGPLANTS by @lazycatkitchen

📝 INGREDIENTS
* 2 large aubergines / eggplants
* 2½ tbsp olive oil
* 3 small shallots or 1 small onion, diced finely
* 4 garlic cloves, diced finely
* 1 tsp ground cumin
* 1 tsp ground coriander
* 1 tsp smoked paprika
* ½ tsp ground cinnamon
* ¼ tsp ground cloves
* a good pinch of hot chilli (optional)
* ½ - ¾ tsp salt, more to taste
* ½ x 400 g / 14 oz can of plum tomatoes or 2 ripe tomatoes, peeled and chopped
* 2 tbsp tahini
* 1 C cooked firm variety of lentils*, (I used small black speckled lentils)
* 75 g / ¾ C walnut pieces**, finely chopped
* ½-1 tsp date syrup or sugar
* 2 tsp pomegranate molasses (or balsamic vinegar)
* 1 tbsp toasted pine nuts, to garnish (optional)
* Fresh parsley, to garnish

😋🍴Turkey BBQ Burgers by @thesaltycooker

📝 INGREDIENTS for Smokey Balsamic BBQ Sauce
* 1 C Ketchup
* 1/8 C Brown sugar
* 1/2 tsp Salt
* 1/4 tsp Black pepper
* 1 tbsp Worchestire sauce
* 1/4 C Smoked balsamic oil

👩‍🍳 Directions:
Mix all of the ingredients together in a bowl and set aside.

📝 INGREDIENTS for Turkey Burger
* 1lb Ground turkey
* 1/2 tsp Kosher salt
* 1 C Panko crumbs
* 2 Egg whites
* 1/2 tsp Korean chili flakes
* 1/2 tsp Smoked paprika
* Pinch of pepper

👩‍🍳 Directions:
1. Mix all of the ingredients together in a bowl.
2. Mix until just incorporated (don't over mix).
3. Add 1 tbsp of olive oil to a skillet and place over med/low heat.
4. Make 4 patties from the turkey mix and place in the skillet.
5. Allow to cook for a couple mins until lightly browned then cover with a lid. Cook for about 5 mins on the first side, flip, cover and cook for an additional 3-5 minutes. Until the thermometer reads 165 in the center.
6. Remove and time to assemble the burger. See below for toppings.  *Burger Toppings, pickle chips, smokey provolone cheese, caramelized onions, cooked bacon, the bbq sauce and a toasted bun.

What have you got cooking for dinner tonight?

We're making a batch of Chimichurri Meatballs🍴😋@themodernproper

📝 INGREDIENTS
* 3/4 C Bread crumbs
* 1lb Ground beef, 80/20
* 1lb Ground lamb or pork
* 2 Large eggs
* 1 tsp Kosher salt
* 1 batch Chimichurri sauce (see link for recipe below)

👩‍🍳 Directions:
1. Heat oven to 350°F. Prepare a large rimmed baking sheet with parchment paper.

2. Make the chimichurri sauce according to directions in separate post.

3. In a large bowl, mix together 1/3 cup prepared chimichurri with the bread crumbs, toss to combine until there are no longer any dry parts.

4. Add in the ground beef and lamb or pork (whichever you prefer), eggs and salt. Mix well with your hands until the breadcrumb mixture is completely incorporated with the meat and eggs.

5. Roll the meat mixture into 1 ½ inch balls (about 2 tablespoons each) and place on the baking sheet, about 28-30 total.

6. Bake for 15 minutes. Turn the oven to broil and cook for 5 more minutes until the meatballs are browned and have reached an internal temperature of 165°F on an instant read thermometer. Discard any fat that leaked out of the meatball (don’t worry they will still be really tender.)

7. Transfer the meatballs to a serving platter and serve with remaining chimichurri sauce.

* 320 g strong white bread flour
* 220 ml luke warm water
* Large pinch sea salt
* 7 g fast yeast
* 3 tbsp olive oil extra virgin will also work

Garnish:
* 3 sprigs fresh rosemary roughly chopped to add to the dough’s surface
* 3 large cloves garlic roughly chopped to add to the dough’s surface
* 6 cherry tomatoes halved
* 2 tbsp olive oil +1 tbsp to drizzle over after baking
* 1 tsp sea salt

* 4 Russet potatoes, peeled and quartered (about 3 pounds)
* 2 tablespoons salted butter, at room temperature
* 2 cups shredded sharp cheddar cheese. plus more for topping
* 2 ounces cream cheese
* kosher salt and black pepper

ONION BUTTER SAUCE
* 4 thick cut slices bacon, chopped
* 4 tablespoons salted butter
* 2 yellow onions, thinly sliced
* 3 tablespoons apple cider vinegar
* 1 tablespoon fresh thyme leaves
